Besan Chakki

1/160 ƒ/6.3 ISO 640 55 mm

Also known as Mohanthal this is perhaps one of my favorite sweets of all time. Made from crushed besan its always moist, moist from the pure ghee that makes up about one third of its weight. It signifies decadence and was one of the main dishes made at royal weddings.

    1. Besan is gram flour, the one used in this is rather coarsely ground. The texture is thus slightly crumbly, fatty but moist. Imagine a slightly wet ladoo if you have had one. Here is a recipe for you to see how its made.
